Today The Spicy Apron brings you one of the best one pot camping recipes and it’s one of our favorite camping meals for kids. This one pot chicken and rice has a little kick and a little heat and is a great spanish chicken and rice recipe. If you’re looking for one of the best one pot camping meals, you’ve found it because this is my go to when I want the best chicken and rice recipe while we’re camping (or any other weeknight.)

1 tablespoon olive oil
1 pound boneless, skinless chicken breasts or tenders, cut into 1-2 inch pieces (can also use thighs – my fave!)
1 1/2 cups long grain white rice, rinsed well
1 15 oz can black beans, drained and rinsed (or 2 cups cooked beans if you’re making them from dried. Can substitute corn.)
1 cup salsa
1 4 oz can diced green chilies (optional)
1 packet taco seasoning
3 cups chicken broth (can use water)
Cilantro, diced fresh tomatoes, shredded cheese and sour cream can all be used for toppings if desired.
1. Heat a large pot on medium high heat and add oil until shimmering. Add diced chicken and saute until lightly browned on all sides (does not need to be fully cooked).
2. Add remaining ingredients except toppings and stir well. Bring to a boil, then cover and reduce heat and simmer 20 minutes. Turn off heat, remove lid and stir. Serve in bowls with desired toppings and with a side of tortilla chips
